Wholesome Breakfast Skillet

Serves: 6 servings
- 2 Sausage Links
- 1 Large Red Potato
- 1 Large Red Bell Pepper
- 1 Large Sweet Onion
- 4 oz., Sliced White Mushrooms
- 3 cups Spinach
- ⅓ cup Shredded Cheddar Cheese
- 6 Eggs
- 2 Tbsp. Butter
- ¼ cup Fresh, Diced Thyme
- Salt & Pepper to taste
- Chop the potato, onion, bell pepper, sausage, and spinach and set aside. Preheat oven to 350 degrees F
- Heat your cast iron skillet on the stove, cook the sausage and render the fat
- Take sausage out of the skillet and place in a bowl on the side
- Add butter and potatoes to the skillet and cook until brown
- Remove the cooked potatoes from the skillet and set aside in bowl with sausage
- Add onion and bell pepper to skillet and cook for 2-3 minutes until tender
- Add in mushrooms and spinach and cook until wilted
- Once all vegetables are cooked add the sausage and potatoes back to the skillet and cook for 1-2 minutes.
- Add in thyme, salt and pepper to taste
- Use a spoon or spatula to make wells into the skillet and crack eggs into each hole
- Top skillet with cheddar cheese, place skillet into the oven and bake for 7-10 minutes
- Carefully take skillet out of oven and serve immediately
