Wholesome Breakfast Skillet

  • 2 Sausage Links
  • 1 Large Red Potato
  • 1 Large Red Bell Pepper
  • 1 Large Sweet Onion
  • 4 oz., Sliced White Mushrooms
  • 3 cups Spinach
  • ⅓ cup Shredded Cheddar Cheese
  • 6 Eggs
  • 2 Tbsp. Butter
  • ¼ cup Fresh, Diced Thyme
  • Salt & Pepper to taste
  1. Chop the potato, onion, bell pepper, sausage, and spinach and set aside. Preheat oven to 350 degrees F
  2. Heat your cast iron skillet on the stove, cook the sausage and render the fat
  3. Take sausage out of the skillet and place in a bowl on the side
  4. Add butter and potatoes to the skillet and cook until brown
  5. Remove the cooked potatoes from the skillet and set aside in bowl with sausage
  6. Add onion and bell pepper to skillet and cook for 2-3 minutes until tender
  7. Add in mushrooms and spinach and cook until wilted
  8. Once all vegetables are cooked add the sausage and potatoes back to the skillet and cook for 1-2 minutes.
  9. Add in thyme, salt and pepper to taste
  10. Use a spoon or spatula to make wells into the skillet and crack eggs into each hole
  11. Top skillet with cheddar cheese, place skillet into the oven and bake for 7-10 minutes
  12. Carefully take skillet out of oven and serve immediately
